Économies, spatialités et urbanités du pain : explorations dans la métropole grenobloise

The symbolic dimension and cultural weight of bread overshadows its materiality, spatiality and sustainability. The bread in its most concrete aspects is little known and deserves to be questioned. Like the rest of our food, it is increasingly assimilated to a product that is part of an industrialization process. As a result, he was profoundly modified and, with him, the territories of his production, commercialization and consumption. To show these bread territories both in their urban form and in their potential for urbanity, we propose here an exploration of the Grenoble metropolis. Where and how can you buy bread there? Where does the flour come from? From which agricultural land? Cartography, processing of archives and spatial data, surveying and sensitive analysis form the basis of our responses through which a new local bread economy is emerging. A new way of sharing that is not without consequences for the urban environment.
La dimension symbolique et le poids culturel du pain éclipsent sa matérialité, sa spatialité et sa durabilité. Le pain dans ses aspects les plus concrets est peu connu et mérite d’être interrogé. Comme le reste de notre alimentation, il est de plus en plus assimilé à un produit appartenant à un processus d'industrialisation. Il s'en trouve ainsi profondément modifié et, avec lui, les territoires de sa fabrique, de sa commercialisation et de sa consommation. Pour donner à voir ces territoires du pain à la fois dans leur forme urbaine et dans leur potentiel d'urbanité, nous proposons ici une exploration de la métropole grenobloise. Où et comment peut-on y acheter du pain ? D'où la farine vient-elle ? De quelles terres agricoles ? Cartographie, traitement d’archives et de données spatiales, arpentage et analyse sensible constituent la base de nos réponses à travers lesquelles une nouvelle économie locale du pain se dessine.Un nouveau mode de partage qui n’est pas sans conséquence sur l'urbain.
