Systèmes agroalimentaires localisés: les lieux, les mets et les mots
Résumé
This paper start with analysis of the evolution of the concept of "Localised agri-food systems” to approach then three questions: i) the processes of territorial anchoring of productive activities; ii) the role of food cultures and the evolution of links between food and territories, iii) the speeches, the formulae, used to express the current changes. She underlines that the links to a place vary according to the individuals and the type of productive activity, so the degree of anchoring territorial depends not only of economic variables but also of emotional and symbolic links established with a place, the processes of localization / delocalization of productive activities depends of these complex links. This paper draws the attention on the «power of the mouth» who can even manage to modify markets or to redraw the landscapes, he conclude on the importance to integrate into analyses the end activities of the chains food (evolution of cooking's, diverse forms of catering), as well as the interest of the concept of "Localised agri-food systems” (Syal in French) is to be an integrator concept, which may link in a system variables considered often in a separate way. Finally is asked the fundamental question of the role of the language in the construction of concepts in social sciences, by questioning “clichés” used to express the observed phenomena and the current evolutions.
