The abattoir, from the factory to the farm: ethics and morality in the dynamics of innovation in agrifood systems

The aim of this chapter is to clarify the place of morality in innovation processes. To generate responsible innovation(s), a category that is today key in innovation policies, we have to understand how moral responsibility, which is at the heart of agriculture and food issues, influences innovations. This assessment is undertaken here using a descriptive approach and lays particular stress on the actors’ moral judgments. This chapter discusses the results of an action-research approach on alternatives to the industrial slaughter of livestock animals, showing how farmers place their moral responsibility for their animals at the centre of an innovation process: on-farm slaughter. More broadly, it invites us to restore the common-sense knowledge of morality in the face of a rise in ethical expertise, both in the evaluation of innovations and in the transformation of relationships with animals in our societies.
