Résumé
The 5th food transition observed since the Neolithic period leads to three prospective scenarios: the first one characterized by the artificialization of food and concentration of firms, the second by total food quality, proximity of actors and participatory governance, the third being a hybrid. Based on the sociology of translation, the États généraux of food in France could be an original mechanism for moving towards a more sustainable food.
La 5e transition alimentaire observée depuis le néolithique débouche sur trois scénarios prospectifs : l’un caractérisé par l’artificialisation de la nourriture et la concentration des firmes, le 2e par la qualité totale des aliments, la proximité des acteurs et une gouvernance participative, le 3e étant un hybride. Les États généraux de l’alimentation en France pourraient, en s’inspirant de la sociologie de la traduction, constituer un dispositif original pour aller vers une alimentation plus durable.
