CRYSTALS OF INTERFACES : THE CUBIC PHASES OF AMPHIPHILE/WATER SYSTEMS

The interfaces are the liquid-liquid interfaces built by amphiphilic molecules. They organize space in two media : polar and paraffinic. Under certain conditions this organization may present a 3-d periodicity of cubic symmetry. Such cubic crystals are quite unusual in the sense that their long range order is not the result of the propagation of a short range order. They can be seen as crystals formed by two liquids separated by an interface. We shall analyze them in relation with the problem of space partition by periodic minimal surfaces.
