The prospective approach must be based on a shared diagnosis, which combines quantitative and qualitative data, serves as main theme in order to suggest some strategies of actions. At the moment here is not a real labour shortage in the hotel and catering sector in Burgundy. The main problem is to improve the conditions and organisation of the work time in order to reduce the employees' leaving from the industry.
