Food and Foodways in the Medieval Islamic World

Résumé

This article proposes to describe the foods and foodways in the medieval Arab world. We relied on two types of sources, the cookbooks on the one hand and the market regulations called “ḥisba treatises,” on the other hand. This allows two points of view to be given, one more classic concerning the food of the elites and the other less studied describing the popular foods. We were able to draw a panorama of the most popular foods in a geographical area centered around Baghdad, Cairo and Damascus between the 10th and 13th centuries.
