"Le geste en cuisine : de la technique à l'art culinaire" (2011)

Abstract : "The gesture plays a crucial role in culinary development. The transformation of a food into a dish is as much a function of the skill of the cook and the tool used as it is of the organization of the kitchen laboratory. [...] In history, chefs have not stopped refining their ways of doing things, rationalizing their work space, to reach a greater sophistication of the kitchen. It is thus a whole professional know-how that has been transmitted over time, in a perpetual quest for culinary perfection: of what will be called "the culinary art".
