A new dairy product fermented exclusively by dairy propionibacteria: a new tool to study probiotic potentialities in vivo

Propionibacterium freudenreichii is a GRAS bacterium used as a ripening culture. It is also studied for its probiotic potentialities such as the modulation of gut microbiota and enzymatic activities, and of the gut epithelium proliferation/apoptosis balance. These effects require high populations of live and metabolically active P. freudenreichii in the gut. Fermented milks like yoghurts protect P. freudenreichii from digestive stresses but also contain lactic acid starter bacteria. Thus, we developed a new fermented milk with P. freudenreichii as a sole bacterium to specifically investigate its probiotic effects.
