L’enseignement de l’analyse sensorielle des vins à la lumière du « déjà-là » sensoriel de l’enseignant

Abstract : The teaching of the sensory analysis of wine is a central subject in the training in hospitality catering. According to Yves Chevallard (1985) didactic transposition is the process whereby an object of knowledge becomes a teaching object. The internal didactic transposition is the transition of knowledge to teach (locatable in the repositories of diplomas, examination papers or textbooks) knowledge actually taught by the teacher in class. The clinic posture didactics (Carnus, 2001), helps reveal the transformation of knowledge to be taught by the teacher unwittingly, unconsciously. Professor composed under the influence of his "already-there" decision (Carnus, 2015), latent and influential part of the teaching subject, which pushes him to overhaul the knowledge to be taught. We highlight an "already there" sensory teachers through the analysis of a corpus of sensory analysis and questionnaires we approach the knowledge to be taught. We find that the sensory analysis (as a teaching object) is under the influence of "already-there" sensory teacher.
