Comparing simulations from compartmental and classic PDE approaches to model drying of food solids

This work aims at giving grounds to a simplified simulation model of drying process. The modeling is based on a compartmental approach. This approach allows for a much faster prediction of drying kinetics than conventional numerical modeling (i.e. finite differences, elements or volumes). Given that the compartmental modeling depends on certain geometric properties (including the size of the compartments), so those are obtained by inverse modeling, comparing predicted kinetics of compartmental model and of exact solution of the mass transfer kinetics.
